I assembled a staff made up predominantly of people from the area who for the most part had never worked in a hotel. Some of them, like Virginia and Paola, had never really worked for anyone else at all, and I don’t intend to ever let them go. Our guests return year after year to the same happy team. We are friends first, then colleagues. Every day the staff eats together, and in that moment, service in the hotel stops. You will often see a receptionist or cleaner eating with their friends in the restaurant on their day off. We are a community, not a case study for a hotel school, and we were smiling before you even arrived.
